Sheet Pan Chicken Fajitas

A simple, delicious and healthy recipe for Sheet Pan Chicken Fajitas that is perfect for a quick weeknight dinner.

Ingredients

  • 1 lb. chicken breasts (or shrimp!), sliced into thin strips
  • 3 bell peppers (red, yellow, and green), sliced
  • 1 medium onion, sliced
  • 2 tbsp Lime Infused Olive Oil
  • 2 tbsp Garlic Cilantro Balsamic Hot Sauce
  • Salt and pepper to taste
  • Fresh cilantro, chopped, for garnish
  • Optional toppings: low-carb tortillas, sour cream, guacamole, or salsa

Instructions

  1. Preheat your oven to 400°F. Line a large baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, combine the sliced chicken, bell peppers, and onion. Drizzle with Garlic Cilantro Balsamic Hot Sauce, Lime Infused Olive Oil, salt, and pepper. Toss everything together until well coated.
  3. Spread the chicken and vegetable mixture evenly on the prepared baking sheet.
  4. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender, stirring halfway through for even cooking.
  5. Remove from the oven and garnish with chopped cilantro before serving.
  6. Serve immediately with optional low-carb tortillas, sour cream, guacamole, or salsa if desired.
