Avocado Egg Salad Toast

Avocado toast with egg salad is fresh, and healthy. This recipe contains no mayo, easy to make and delicious!

Ingredients
1 avocado (roughly mashed)
4 hard boiled eggs (peeled and diced)
¼ cup green bell pepper (minced)
2 tablespoons Greek yogurt
1 tablespoon of Meyers Lemon Olive Oil
2 tablespoons Lime Olive Oil
1 tablespoon fresh parsley (chopped)
½ teaspoon Bacon Salt
½ teaspoon Caramelized Onion Balsamic
4 slices sourdough bread (or crackers, or lettuce)

Instructions

  • Add the peeled and diced hardboiled egg, bell pepper, Greek yogurt, olive oils, and bacon salt to a large mixing bowl and mix
  • Roughly mash the avocado in a mixing bowl, leaving some small chunks of avocado.
  • Toast four slices of sourdough bread.
  • Use a spatula to top each piece of toast. First the mashed avocado, then egg salad.
  • Drizzle the caramelized onion balsamic on top.
