What is Balsamic Vinegar?
Trebbiano and Lambrusco grapes to make outstanding balsamic vinegar.
There is a difference between commercial balsamic vinegar and traditional balsamic vinegar.
Fermented grape juice is cooked then matured in barrels, which can be made up to seven types of woods.
A true balsamic vinegar must evaporate over 12 years in authentic wood barrels. This traditional balsamic is made only from pure grape juice unlike commercial balsamic vinegar, which has additive such as caramel and wine vinegar to give it flavor and color. We go to the supermarket to buy balsamic vinegar, and we think it's the real thing. But it's not.
Balsamic vinegar is usually used with cold foods but can be delicious in a hot dish.
