Herb, Ham, & Cheese Frittata

Ingredients

6 eggs
½ cup table (18%) cream or evaporated milk
¼ cup Tuscan Herb infused olive oil
½ tsp sea salt
¼ tsp ground black pepper
¼ cup chopped green onions
½ cup chopped red or green bell peppers, or a mix of colors
½ cup diced ham
1½ cups grated cheddar cheese, divided

Instructions

Preheat the oven to 350°F. Grease a 9-inch pie plate.

In a mixing bowl, beat the eggs, cream, and olive oil.

Pour this mixture into the prepared pie plate.

Sprinkle the remaining ingredients over the egg mixture in the order listed, finishing with the cheese. Sprinkle half the cheese on top and poke it down a little so that it’s covered with egg mixture. Then sprinkle the rest evenly over top.

Bake for 30–35 minutes, or until a knife inserted in the center comes out clean, to ensure the center is set. If the cheese is browning too quickly, cover it loosely with aluminum foil.

Allow to cool slightly and firm up a bit before serving warm.
